Cilantro-Lime Grilled Swordfish (Serves 4)

INGREDIENTS

  • 2 pounds swordfish steaks
  • 3 limes (juiced)
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 cup chopped fresh cilantro
  • 1 lime (quartered)

METHOD

  • Pour lime juice and olive oil over swordfish steaks. Season with salt and pepper and half of the cilantro leaves.
  • Preheat an outdoor gas grill until it is smokin’ hot. Grill the fish for 5-7 minutes per side until it flakes easily with a fork. Actual grilling time will depend on the thickness of your fillet.
  • Sprinkle remaining cilantro over each steak and serve with lime quarters.

Cilantro Lime Brown Rice (Serves 4)

INGREDIENTS

  • 2 tablespoons avocado oil
  • 4 cups brown rice (cooked)
  • 2 limes (zested and juiced)
  • 1/2 cup cilantro (chopped)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper

METHOD

  • Zest and juice a lime.
  • Heat oil in a nonstick skillet over medium-high heat.
  • Add cooked rice and saute until warmed through, stirring as needed.
  • Stir in fresh lime juice, cilantro, salt, pepper, and lime zest.
  • Serve it up and watch it disappear!
