Pak Choi microgreens are the young plants of the Pak Choi green vegetable that are harvested just before their full leaves appear. They have deep green tops and creamy white stems. One of the fastest-growing microgreens, they can be harvested from the tenth day after planting; a great microgreen to grow for beginners. They are also called by the names Bok Choy and Chinese Cabbage microgreens. Pak Choi belongs to the family brassica oleracea, a plant species that includes many common cultivars, including cabbage, cauliflower, broccoli and kale.

Pak Choi microgreens are a more potent version of its mature plant counterpart. They have a mildly sweet flavor with a fresh, crisp and light texture that make them a good addition to micro salads and almost any dish.

Microgreens were introduced as a dish offering in the 1970’s in San Francisco, California, and grew in popularity in the United States from the 1990’s.
