Rosemary and Garlic Roasted Salmon (Serves 4)

INGREDIENTS
- 3 cloves garlic
- 2 sprigs rosemary (About 1 Tablespoon Chopped)
- 2 pounds salmon fillet
- 1 tablespoon extra virgin olive oil
- 2 pinches sea salt
- 1 pinch ground pepper
METHOD
- Preheat oven to 425°.
- Peel and chop garlic. Set aside.
- Chop the rosemary. Set aside.
- Place salmon on a baking sheet covered with foil.
- Evenly distribute olive oil on salmon. Sprinkle salt and pepper over the fillet. Next, add the rosemary and garlic and lightly press into the salmon.
- Place in the oven for 10 minutes or until the salmon is tender and flaky. Serve and enjoy!

Garlic Rosemary Lamb Riblets (Serves 4)
INGREDIENTS
- 1 pound lamb riblets
- 3 cloves garlic (chopped)
- 2 sprigs rosemary (chopped)
- salt
- pepper
- olive oil
METHOD
- Mix the garlic, rosemary, salt and pepper together.
- Brush both sides of the lamb very lightly with olive oil (it doesn’t need more fat, but the oil will help the rub stuck), then pat the garlic rosemary evenly on each side.
- If you have time, marinate in the fridge for a couple of hours.
- Preheat the broiler. Broil for 5 minutes on each side.
- Lower the oven to 300 degrees and let cook for 2 hours, or until dinner is ready.
- Cut along ribs individually and serve.
