Endive Tuna Boats (Serves 4)

INGREDIENTS
- 1 endive
- 1 can tuna (your choice)
- 1 avocado
- tomato salsa (for garnish*)
METHOD
- Remove any ragged leaves from the endive, and separate into individual leaves. When they get too small for use as “boats,” you can slice them into ribbons for use as an additional garnish on the boats, or toss them into your salad.
- Thinly slice the avocado flesh and lay a few pieces into each endive leave. Spoon tuna in the center of the boat, and top with salsa, to taste.

Sweet Endive Salad (Serves 4)

INGREDIENTS
- 4 cups endive (chopped)
- 1 cup diced apples
- 1/2 cup pomegranate seeds
- 1/4 cup honey
- 1/8 cup balsamic vinegar
- 1 pinch kosher salt
METHOD
- In a medium bowl, combine the endive, apples and pomegranate seeds. In a small bowl, whisk together the honey, balsamic vinegar and salt. Pour it over the endive salad and mix well.
